1.one or two balsam pears, clean them up and scouge all the seeds out.
2.Slice them, not too thin.
3.Add a little salt and boil water.
4.When it's boiling, put all the slices in for about 1 minute.
5.Get then out and dim them into the cold water.
6.Get red pepper (dried or fresh)and red and spring onion slices
7.Smash one or two garlics and put them into a bowl and mix with soy sauce, vinegar, sugar, sesame oil.
8.Drain the melon and put them in a plate, scatter get red pepper (dry or wet), spring onion slices on it.

10.Heat up a little cooking oil to a high temperature and pour it on the garlic and pepper. Add more salt if neccessary.
Put it into the fridge for a moment if you're not in a rush.
