Shaanxi<EM> yangrou paomo</EM>

The Shaanxi specialty of Paomo is a hot lamb (or beef) stew served with chopped-up leavened bread.

The unique dish is very much a central part of the food culture in the province and dates back as far as the Song Dynasty (960-1279).
