The Shaanxi snack roujiamo is China's answer to the hamburger. Yet the simple fast food item is much older, with historians dating it back some 2,400 years.

Authentic roujiamo contain pork that has been stewed for hours in a soup containing more than 20 kinds of spices and seasonings. The meat is then shredded and mixed with coriander and mild pepper.

The meat is stuffed in mo, a type of flatbread made from wheat flour and baked in a clay or mud oven.

Xi'an city center is home to an array of unassuming time-honored roujiamo shops.
