Choujiu, a popular drink in Shaanxi, is a type of fermented alcoholic beverage brewed from glutinous rice. The drink can be traced back to the Tang Dynasty (AD 618 – 907) where it was praised by the poet Li Bai. It has a thick consistency and has a milky white color, which is sometimes compared to jade.
