Youmian (hulless oat flour) is a specialty in Hohhot, and can be steamed or fried. There goes a saying that "Youmian, potato and sheepskin jacket" are the three most precious necessities. It has recently been listed as a local dish of Wuchuan county, Inner Mongolia autonomous region.
