Kweichow Moutai, China's top liquor brand, set up its first scholar workstation on Aug 6, with Chen Jian, expert in fermentation engineering and environmental microbiology research, scholar of the Chinese Academy of Engineering, and president of Jiangnan University, appointed as head.
As the first scholar workstation for Moutai-flavored liquors, the workstation is also an important part of the strategic cooperation between Moutai group and Jiangnan University.
Chen said that both sides have collaborated in various projects and seen strong results, including winning the second prize in the National Award for Technological Innovation.
"The workstation will focus on a couple of key areas, such as the microorganisms during the Moutai brewing process, the construction of a Moutai intelligent distillery and food safety control," said Chen.
"By taking the key and modern engineering techniques as breakthroughs, we plan to lead the world in brewing and solid-state fermentation," he added.
Li Baofang, chairman and general manager of Kweichow Moutai Group, said that unique brewing techniques and microbial environments are the company's greatest strength.
"The establishment of the scholar workstation will improve Moutai microbial research and help develop Moutai liquors," he added.
