Yuan’s Pork Intestine Rice Noodles

Pork intestine (“fei chang”) is a food that some might find squeamish but is popular throughout China and especially in Sichuan. It is stewed, stir fried and stirred into soup. A popular way to eat “fei chang” is with rice noodles, “fei chang fen” in Chinese. The small restaurant selling Yuan’s Pork Intestine Rice Noodles is a hot spot for foodies and has been open for nearly two decades. Those wanting to try “fei chang fen” will need to arrive early as there is often a line stretching out the door.
