Chef Mauro Colagreco, whose Mirazur restaurant on the French coast has two Michelin stars, opened his new restaurant Azur last week, bringing the flavors and festive spirit of the French Riviera to China's capital. Among his signature dishes is The Forest, a confection of quinoa risotto, wild mushrooms, parsley foam, potatoes and parmesan cream that evokes memories of its namesake. It was a definite standout at the opening event; if the line of people waiting to be served was any indication, The Forest is sure to become one of Azur's most popular dishes.
