At first the restaurant was first afraid that serving portions of its food was too small for Beijingers at the beginning, according to Hsieh. However, they decided to keep the original style. Fortunately, the customers did not take long to accept it
“Because we are a Taiwan brand, we have to train all our staff about our food tradition and the way to enjoy it,” she explained. “The company has professional cultural officers to train restaurant employee so they can spread the message to the customers. I think now our customers do enjoy the option of having a small portion of noodles and ordering more side dishes.”
Although many key ingredients, including the braised minced pork for the topping, have to be imported from Taiwan, the brand has kept its reasonable prices and decent service in the Chinese mainland.
