Asado Asado is considered a national dish in Argentina, referring to a range of barbeque techniques and attending a barbeque. Asado is popular in Brazil, Chile, Colombia, Ecuador, Paraguay, Peru and Uruguay. One kind of asado requires a fire pit surrounded by metal crosses, which can hold an entire animal.
