Like pickled red cabbage and cucumbers in Europe, Zhacai is a traditional popular relish in China. Among the most famous brands is Fuling Zhacai — from Fuling in Chongqing, a district known as the birthplace of Zhacai.

Hundreds of millions of people have tasted Fuling Zhacai, but they may have no idea of its origin. In 1898, Qiu Shou’an, a merchant in Fuling, first made the pickle by salting, pressing and drying green mustard stems then rubbing them with the resulting unique spice mixture. Qiu’s product, which he named Zhacai — literally pressed vegetable — won instant success in the market because it was tender, crisp, tasty and appetizing. The unique flavor and quality has been carried down for more than a century. Today it is not only a favorite relish in Fuling, but also popular across China and internationally. Fuling Zhacai and Fuling mustard are registered geographic marks applied by the Fuling District Zhacai Administrative Office of Chongqing, which has striven to promote the development of the product and make Fuling Zhacai a popular brand with world fame.

Establishment of a large-scale mustard production A large mustard cultivation center has been established in Fuling with 600,000 farmers at 22 townships. One of the largest of its kind in China, it now covers 620,000 acres and produces 1.3 million tons of mustard stems annually.

Standing out among peers There are dozens of Zhacai producers in Fuling, with 17 recognized as leading enterprises at the district or municipal level and one as a “Leading Agricultural Enterprise” at the state level. Besides famous brands in Chongqing like Yalong and Chuanling there are nationally famous brands as Fuling Zhacai, Wujiang and Lameizi, which along with the other 35 brands in Fuling, have attained state-level green food certification. High quality, integrity and improving management are the keys to the success of the enterprises. Mutual benefit with the community With high quality and growing fame, Fuling Zhacai is sold all over China and exported to countries in Southeast Asia, Europe and North America. The success of Zhacai enterprises brings obvious economic benefits to farmers that provide raw materials as their annual income greatly increases through planting mustard. Environmental protection is another concern of the Zhacai production enterprises. The full and comprehensive usage of mustard waste makes these enterprises more environmentally friendly and also brings them fine economic rewards.

In 2008, the traditional production techniques of Fuling Zhacai were recognized as China’s intangible cultural heritage.
