Don't sound completely uncultured when you arrive at your first meeting: Champagne is categorized according to its level of dryness ... *Brut: Driest, and most popular *Extra dry: dry, but less dry than brut *Demi sec: has more sugar, a little bit sweet (but not a dessert wine) ... and by the type of grape: *Blanc de Blanc: 100 percent Chardonnay. A good pre-dinner drink, or serve with light eats, such as fish, seafood, poultry, mushrooms, and sushi. *Blac de Noir: 100 percent Pinot Noir. Better with foods that have a strong flavor, like cheese and meat. *Rose: Pink in color, small amounts of Pinot Noir or Pinot Meunier are added to white wine.
