Chef Vilhjalmur Sigurdarson has based his career and culinary art on the notion of "love and family"; instead of opening his restaurant in one of the European foodie capitals where he earned his reputation at Michelin-starred restaurants, he chose the small town of Ypres after becoming entranced with the quality of local ingredients there. His four-course lunch set at TRB-Forbidden City is 588 yuan ($86) plus service charge; five-course dinner is 888 yuan, including wine pairing.
