Method: 1. Cut avocados into halves and remove seed with the heel of a knife. Scrape out the flesh into a bowl and break it up into chunks. Squeeze the lemon juice over, to prevent the avocado turning black.
2. Add minced garlic, diced tomatoes, chili if using, shallots and mix into the avocado flesh. Season with salt, to taste.
3. Fold in 1 tablespoon of the mayonnaise or dressing and mix well.
4. Smooth out the surface of the guacamole and then spread the remaining spoonful of mayonnaise evenly over. This will help keep the guacamole nice and fresh and green.
5. Cover the bowl in cling wrap and refrigerate at least an hour to allow the flavors to infuse and blend.
Serve with your favorite chips or even vegetable crudites. Ole!
