Yulin bean curd is made from good quality soybeans and "peach blossom water" using grinders. The bean curd, made with a coagulant (magnesium chloride), is delicious and fresh. When Chinese imperial Emperor Kangxi made an inspection tour to Yulin, the local chief served this dish. After tasting Kangxi was full of praise, saying: "The bean curd looks like gold inset into the jade plate, while the spinach resembles a green parrot with a red mouth," which has been passed down from generation to generation. |
