At the end of last year Tianjin Joy City IF Street opened with its offering of 19 branded eateries, many of which were making their Tianjin debut. Today we introduce you to a special bakery store which is famous for using natural fermentation in its products - Taipei Story.

Taipei Story came about as the result of a coincidence. The now famous brand had four founders - one from Taiwan and the other three from Beijing. Once upon a time, three men came to Taiwan for a visit and tasted the special naturally fermented bread. They were immediately attracted by its flavor, but it was not until six months later, when they returned to the island that they got the chance to meet with the bread’s manufacturer. When they returned to Beijing they founded Taipei Story to distribute the bread. The big selling point of their bread is the idea that bread can be a nutritious, healthy, high quality and tasty food.

Taipei Story use natural fermentation and absolutely no preservatives in their products. The downside to this is that they will not keep fresh for very long, but this has not hindered its popularity and the bread is now selling like hotcakes. The bread is not easy to produce as the natural fermentation needs a long period of time to have an effect and the manufacturing processes are quite complicated. However, one look at the bread, then a smell and a taste and you will know why it is so popular. Every piece of bread can be rightly called a work of fine art and because you know it is fresh and healthy for you it tastes even better.
