Datong fried cake

This cake is a popular traditional food in Datong county, Shanxi province, and is often used as a special treat for guests. It is fried in linseed oil, so it is crisp on the outside and soft inside, and quite tasty. Often it has a stuffing of sweet bean paste, potatoes, Chinese chives, or meat to give it even more flavor.
