Braised potato and oat noodles

Making these noodles requires a special process, where the oat dough is twisted into strips by hand. It is said that a skilled person can make five to six at a time in one hand at tremendously high speed. When the noodles are cooked, they are fried together with potato and garlic and sometimes with eggplant or other vegetables. The potatoes are soft and the noodles chewy with their own particular flavor.
