Goby, also known as Guang fish in Chinese, features a big flat head and long tail. Its meat is delicate and tender, which is suitable for both braising in soy sauce and making soup with toufu. Stewed goby with toufu is a favorite Shandong cuisine among locals.
Guang fish stewed with Chinese cabbage is also very popular in Yantai in cold winter.
