The unique dishes of Kitchen Pavilion are: noodles with red spicy oil and fish, noodles with consommé and duck, Kunshan traditional braised soy sauce pork, shrimp and eggs, the “three tastes” dish and Su cuisine. The noodles with red spicy oil and fish are original and not oily. The original recipe utilizes a clean fish, getting rid of the scales, gills and fluid, before boiling the blood to make soup and creating stewed fish.

The noodles with red spicy oil and fish are covered by thick oil and sauce, so that it can keep your body warm and healthy. Local people have a saying: "The third nine-day period in winter is as cold as hoarfrost. Entering the shop, you will soon be happy. Eating a bowl of noodles makes the whole body warm. Hot noodles and soup let people sweat profusely".

The integration of “five heats” is a unique feature of Kitchen Pavilion. Red oil needs to be brought to a boil. The fish should be eaten just out of the boiling pan. Noodles are boiled. Boiling water should be kept boiling and each bowl of noodles must pass through the boiling water so that the oil does not stick to the bowl and so no residual soup is left in the bowl.
