Zhenghu pressed salted duck

Zhenghu pressed salted duck is a local specialty of Shaxian county, East China’s Fujian province. Zhenghu pressed salted ducks are made of meaty Banfan ducks that are wild-raised in local crop fields. These ducks weight no less than 2.25 kilograms. During the production process, a layer of sesame oil is wiped evenly on the duck to increase flavor and to preserve the duck against insects.

The ducks are finally baked in ovens above the fire that made from sea-seed kernels. This traditional way of production makes sure that the products are tight in meat, juicy yet not fattening.

Many brands make the pressed salted ducks, and “Zhengzong” brand outstands others. The ducks are measured and sold by size. A mega-sized one costs 30 yuan ($4.89) and a big one is 26 yuan.
