After tantalizing diners in Shanghai and Hong Kong with a "tapas festival" that included oysters with "white gazpacho" and crispy suckling pig with scallops and artichokes, guest chef Alain Devahive Tolosa takes his Asia road show for China's Ritz-Carlton hotels to Beijing for a gourmet feast from April 13 to 17.

Devahive, who created a stir in Asia with the opening of Catalunya in Singapore in 2012 and Hong Kong the next year, combines his Spanish roots with his creative culinary techniques, creating a showcase of molecular gastronomy with plates like his "Mushroom Infusion with Tofu Parmesan Cheese and Truffle Air" and "Red Prawn Carpaccio with Garlic in Textures".

Lunch is 588 yuan ($95) plus service charge; dinner 788 plus service charge per person; gala dinner with surprise menu and Spanish-wine pairing is 888 yuan plus service charge on April 17.
