Marugame Seimen opens at Beijing apm

Marugame Seimen, originally from Marugame in Kagawa, Japan, opened at Beijing apm last week.
Marugame Seimen is a special restaurant that offers genuine, delicious Sanuki Udon utilizing a self-service style. The restaurant uses carefully selected wheat flour produced in Japan along with special noodle-making machines.
Dedication to Udon
Marugame Seimen's Udon features flour made from high quality wheat. The flour, amount of water, temperature and other aspects are different according to the season when creating the noodles. For this reason, the first batch of boiled noodles needs to be tasted every morning so as to adjust the adequate boiling time. The person in charge of boiling the noodles at each of their restaurants gives full attention to the process in order to ensure the noodles are in the best conditions everyday before they are served.
Dedication to soup
Without losing the flavor of the wheat flour, soup helps bring out the great taste of the noodles and is another main feature with the Sanuki Udon dishes. Of course, the white base sauce used at Marugame Seimen is freshly prepared daily at each location.
The quality of the soup will deteriorate if a large amount is made at the same time. For that reason, the Marugame Seimen style is to make every effort to create their soup from scratch.
