HAIRY CRABS
This is the start of the season for the hairy crabs, treasured for their aromatic roe and milt. The best are from Yangchenghu Lake, recognized by their shiny green-blue carapace, their snowy-white bellies and the golden "hair" on their legs and a thich pelt of "fur" on their pincers.
Buy those that are heavy for their size.
