When white is right

By Zhou Yutong & Sun Ye | China Daily | Updated: 2013-04-15 14:09
Name: Anji White Tea

Type: Green tea

Origin: Northern Zhejiang province

Tea etiquette 101

To make green tea with a lingering flavor, do not drain the glass pot after each round, rather, leave the leaves soaked and rinsed. That will make the next round less bland.

However, after three brews, the leaves will be totally bleached and the refreshing taste gone.

Do not eat meat with Anji White tea, or in fact, any green tea. It dampens the flavor and ruins proper digestion.

Nothing should be consumed in excess, even this delightful, wholesome tea. Allowing for the amount of protein, minerals and tea polyphenols that an average body needs, the suggested amount of tea per day is 3 to 5 grams.

For those who dine heavily on beef and lamb, and rely on a high-fat diet, higher rations are recommended since tea generally helps to cut down fat. For them, 15 to 20 grams of tea is ideal per day.
