Ambassadors' wives learn to make Chinese dim sum
1. Deep-fried Ball in Coconut Milk and Bird's Nest
Recipe
Glutinous Rice Flour 500g
Sugar 200g
Natural Baking Soda 5g
Carrot Water 300g
Sesame Seeds 300-500g
Coconut Milk 400g
Bird’s Nest 100g
Potato Starch 10g
Olive Oil 1 bottle
Pre-work Preparation
1. All the ingredients (glutinous rice flour, sugar, natural baking soda, sesame and potato starch) can be purchased from the supermarket
2. Carrot Water: Put carrot with some water into juice extractor (Juicer)
3. Potato Starch Water: Water mixed with potato starch
4. Bird's Nest: Soak the dry bird's nest into the warm water for 30 minutes
Cooking Process
1. Mixed up glutinous rice flour, sugar, natural baking soda and carrot water, roll into a ball or you can mix up everything with a machine (Mixer).
2. Cut the dough into several small balls (20g).
3. Dip the small balls in sesame seeds and roll until they cover the entire surface of the ball.
4. Heat the coconut milk (around 80 degrees) until it boils, then put 200g sugar and 10g potato starch water in it, stir in the coconut milk until it becomes viscous, then pour it into a bowl.
5. Put some oil into a deep pot, the oil should be deep enough to completely cover the sesame balls, the temperature should be between 170-190 degrees, after sesame ball float to the surface, stir them carefully, and gently press them on the side of the pot to make the balls rounder and bigger. When they reach that golden color remove them from the hot oil.
6. Cut a small hole on the top of the sesame ball, saving the cut off piece. Then after creating a space inside the sesame ball, pour the cooked coconut milk into it.
7. Then add steeped bird's nest.
8. Finally re-cover it, and put onto the plate set-up.
