Story of fish-flavored pork

It is said that long time ago, a businessman's family in Sichuan province liked to eat fish. They paid close attention to flavors so they usually added onions, ginger, garlic, wine, vinegar and soy sauce when they cooked fish.

One evening, the hostess was cooking. She saw some ingredients which were left after the last time she had cooked fish and tried to put them into the dish she was making, but she wasn't sure what the flavor would be like. When she was worrying that her husband might not like the dish, the man came home. He was so hungry that he began to eat without recognizing what was in the dish.

As soon as he swallowed it, he asked the wife how she made it so deliciously. The cooking method then spread widely. Since it was made with ingredients that were supposed to be used for cooking fish, the dish was named yu xiang pork. Yu xiang means delicious fish in Chinese. There is no actual fish in the dish.
