Comfort puddings
Recipe |Bread and Butter Pudding
Ingredients (serves 4):
4 slices of stale sandwich bread or half a baguette
100 ml milk
100 g sugar
3 eggs
100 g raisins
100 g butter
Method:
1. Butter the bread on both sides and slice into 2 cm cubes.
2. Beat the eggs with the sugar and milk and add the bread cubes. Leave until the custard has soaked into the bread.
3. Butter a large baking pan very generously. Spoon the bread mixture into the pan and scatter the raisins over the top. Use a spoon to press the raisins into the soft bread cubes.
4. Cut little cubes of butter and scatter over the top of the bread mixture.
5. Bake in a 180 C oven for about 20 minutes until the top of the bread pudding is golden brown. Dust with icing sugar before serving, if you wish.
