15 Hunan dishes listed in classic Chinese cuisine

Fifteen characteristic Hunan dishes including steamed fish head in chili sauce, Changsha-style stinky tofu and braised pork were listed in the book, Classic Chinese Cuisine. Steamed fish head in chili sauce is the representative dish of Hunan cuisine and obtains its highest honor in history.

Li Anming, a master of the Chinese catering culture said, "steamed fish heads contribute to hundreds of billions of yuan in China's catering services and is qualified to be selected in the book. It has been driving the development of the industry over the past decade."
