A mosaic of flavors
Spaniard Raul Ante is a certified Iberico ham-carving master and is vying for a meaty slice of the Beijing market with his restaurant, Mosaico.
Ante became the European Iberico ham-carving competition sub-champion at age 17 in 2001.
That achievement took Ante to Rome as a teacher, and then to Hong Kong as a judge for the special administrative region's first ham-carving contest.
