Updated: 2007-03-08 10:15 Mansuke Nadaya opened his first restaurant in Osaka, Japan, in 1830, and the culinary accomplishments of this exclusive traditional Japanese eatery quickly spread by word of mouth. Today there are over 25 Nadaman restaurants in Japan and seven overseas, including venues in New York and Singapore.
Shanghai's very own branch, located in the Shangri-La Hotel in Pudong, boasts a striking interior design created by the Japanese architectural firm Super Potato. Using natural materials such as granite, clay, wood and glass dividing walls, the decor reflects the natural and fresh qualities of the menu. Specialties at Nadaman in Shanghai include traditional Japanese styles of cooking such as the Kaiseki, which is described as the art of transforming the blessings of nature into food. Seafood of different varieties is imported as a guarantee of premium quality, while dressings and other ingredients from Japan offer authentic flavors of Japanese cuisine to diners. The restaurant's executive chef Fumito Suzuki, a veteran cook of Japanese cuisine, has created innovative dishes set off by over 470 different items of tableware specially created in Japan.
